Cinnamon Coconut Quinoa Granola

This is one of my favorite new recipes.
It took me some time to perfect it.
I hope you enjoy it.

1 cup uncooked quinoa
1 cup old fashioned rolled oats
½ cup slivered almonds
½ cup raw pumpkin seeds
½ cup unsweetened coconut flakes
½ cup dried cranberries
½ tsp cinnamon
½ tsp vanilla
3 tbsp honey
¼ cup coconut oil melted

Preheat oven to 350 degrees.
In a large bowl, mix together quinoa, oats, nuts, coconut, cranberries, and cinnamon. Melt coconut oil in microwave or on stove, add the honey and vanilla, and mix well. Add oil mixture to other ingredients and mix well. Line a baking sheet with parchment paper and spread granola in a thin layer. Place on center rack and bake for 20-25 minutes stirring two times. Remove from the oven and let cool to room temperature. The granola will harden as it comes to room temperature. Store in an airtight container.
