Apple Oatmeal Pancakes

A delicious and healthy start to the day. I was inspired by a recipe I recently found and decided to make it my own with a few added ingredients. I love to add ground flax seed to everything I can. It’s a great way to add “good” fat and fiber to your recipe, plus the kids have no idea it’s so good for them. This recipe was tested by my biggest critics, my boys, and they loved it!

1/2 cup flour

3/4 tsp. baking powder

1/2 tsp. salt

1 tbsp. ground flax

1/2 tsp. ground cinnamon

1 large egg

3/4 cup milk

1  1/2 cups cooked oatmeal

1 medium sized Granny Smith apple, finely diced


Heat skillet to medium heat. Mix together all dry ingredients. Add wet ingredients and apple, mix gently. Grease skillet, pour 1/4 cup serving onto skillet and allow pancakes to cook until bubbles pop, flip and cook the other side until golden brown. Top with fruit and maple syrup. Enjoy!

Makes 10-12 pancakes
